This lightly fermented tea is made from tea leaves grown in the tea gardens of Shizuoka Honyama, the birthplace of Shizuoka tea. The rare variety, Shizu-Inzatsu 131, is hand-picked and the aroma is brought out through a fermentation process called withering, after which it is finished by adding heat to stop fermentation in a Taiwanese-style pan-fryer.

Shizu-Inzatsu 131 is a variety that has a history of being introduced from India during the Taisho era, and the "In" stands for "India." Also, "seedling" refers to tea plants grown from seeds. It has a gorgeous fragrance, and is the parent of varieties with distinctive fragrances such as Fujikaori and Sofu.

It has a jasmine-like aroma, a fruity aroma unique to withered tea, and a refreshing taste with a hint of sweetness and fruitiness, and is a low-fermentation tea similar to green tea, like Taiwan's Baozhong tea. You can brew it in a teapot, or gaiwan like Taiwanese tea, or you can enjoy it by brewing it in water.

Recommended brewing method

For 3g of tea leaves, steep in 120ml of 95℃ hot water for about 1 minute. After that, extend the steeping time to 45 seconds, then 60 seconds.
